Mexican Mini Pepper Tacos

Ingredients
  1. 8 mini bell peppers, assorted colors

  2. 1 lb lean ground turkey

  3. ⅓ cup tomato sauce

  4. ¾ cup shredded Mexican four cheese blend

  5. 1 tbsp dry taco seasoning mix

  6. 3 tbsp water
Garnish
  1. Sour Cream

  2. Cilantro (chopped)

  3. ¼ cup sliced green onions (scallions)

  4. 1 small can sliced black olives
Preheat oven to 350 degrees.  Line a baking sheet with parchment paper (or) tin foil.

Slice the bell peppers in half lengthwise and remove the seeds.

Brown the ground turkey in a large skillet until cooked through.  Drain off excess juices.

Stir in the taco seasoning, water and tomato sauce.

Fill each pepper with meat mixture, top with cheese.  Be as generous as you like with the cheese, it adds to the dish!

Bake for approx. 15 minutes.

Garnish with the olives, onions cilantro and sour cream.

Recipe makes 16 small tacos.

**If you have leftover Taco meat, serve it with chips for dipping!

** You can substitute ground beef for the turkey meat and still be within the guidelines for Keto or Low Carb diets!
