Simple One Pot Parmesan Pasta
				(From Our July 2022 Newsletter - Grandma C.)
				
Ingredients
				
					- 4 cups chicken stock
 
					- 1 12 oz pkg spaghetti (broken in half)
 
					- 1 small onion, sliced thin
 
					- 1 can Rotel tomatoes (mild or spicy, your choice)
 
					- 1 cup fresh basil, chopped
 
					- 1 tbsp minced garlic
 
					- 1 tbsp lemon juice
 
					- 3 tbsp olive oil
 
					- ¼ cup heavy cream
 
					- 1 cup shredded parmesan cheese
 
					- Salt and Pepper
 
				
				Place all ingredients except heavy cream and parmesan cheese in a cooking pot or dutch oven.
				Bring to a boil, cover and cook for 10-12 minutes, stirring a couple of times so the pasta does not stick together.
				Reduce heat to low and stir in heavy cream and parmesan cheese.
				Cook 1 more minute, remove from heat and let it sit for a couple of minutes to thicken.
				Garnish with additional basil.
				Serve with toasted garlic bread or breadsticks!
