Bacon Ranch Egg Salad – Keto Friendly
				(From Our July 2021 Newsletter - Grandma C.)
				
Ingredients
				
					- 6 hard boiled eggs
 
					- 3 TBSP scallions, chopped
 
					- 4 6 pieces cooked bacon (crispy)
 
					- ½ cup cheddar/jack shredded cheese
 
					- ⅓ cup mayonnaise
 
					- 1 TBSP dry Hidden Valley Ranch dressing mix
 
					- Salt and Pepper to taste
 
				
				Chop the hard boiled eggs and place in a medium bowl.
				Crumble the bacon and place in the bowl, reserving a teaspoon or so for topping.
				Add cheese, salt and pepper.
				Add 2 tbsp scallions, mayonnaise and dry ranch dressing mix.
				Stir with a wooden spoon until blended.
				Top with reserved bacon bits and scallions.
