Spicy Sausage & Penne Pasta Comfort Soup

Ingredients
				
					- 1 lb ground spicy Italian sausage
 
					- 2 TBSP butter
 
					- 1 TBSP minced garlic
 
					- 1 cup sliced celery
 
					- 1 medium yellow onion, diced
 
					- 4 cups fresh spinach
 
					- 3 cans chicken broth
 
					- 2 (broth cans) filled with water
 
					- 1 can white or navy beans, drained
 
					- 1 cup penne pasta, uncooked
 
					- 2 tsp Italian seasoning
 
					- 1 heaping tsp dried parsley
 
				
			
				Melt butter in a large saucepan or Dutch oven.
				Add onion , celery and garlic and saute until partially done, approximately 2-3 minutes.
				Add sausage and brown until meat is cooked through.
				Add chicken broth, water, Italian seasoning and dried parsley.  Bring to a boil.
				Add penne pasta & beans.
				Reduce heat to medium/low and simmer approximately 20 minutes.
				Add spinach and cook 5 minutes more.
				Garnish with shredded mozzarella cheese and  a sliced baguette for dipping.   French bread works just as well!
				Makes 4 servings.
